Then the supervisor explained what was going to be done today. because today 2 menus will be prepared for tomorrow after doing a little while. while explaining, the supervisor also shared which groups got the menu to prepare for a while. Then my group got 2.2 rotations, namely khao neow ma muany and rotation 2.3, namely bitch kote 😂.
After that we were all told to disperse and would do the work that had been directed by the supervisor. Then I immediately took out the materials that had been prepared yesterday in the chiller, especially in the meat. And I immediately took frying pan to fry the meat but the fry half-baked. After you have fried, stay in saute and mix all ingredients such as carrot, broccoli and meat then add the sauce that was made yesterday. After the rice has finished, it's also finished, it's time to prepare for tomorrow. Then I prepared the city bitch stuff, the ingredients were carrots, potatoes, minced meat, rice noodles, spring onions, shallots, garlic. Then my friend and I cut carrots, potatoes, leeks, shallots, garlic. And the vermicelli I soak with water so that the rice noodles are soft.
When done, everything is cut into pieces, it's time to blanch the carrots and the potatoes and saute first the onion and garlic until fragrant, then add the minced meat until he turns brown after adding the carrots and the blanched potatoes then enter the rice noodles forget the seasoning, yeah guys. Then it was made by the skin of the city bitch after making it a time to form haha while being helped with other friends as well. After that the town bitch is fried in half and then put in the chiller. Everything is done, it's time for the general cleaning, then go back to their homes.
Recipe "JALANG KOTE"
Ingredients
Dough :
- 200 gr all purpose flour
- 1 pcs egg,beaten
- 60 ml coconut milk
- 50 ml vegetable oil
- 1/2 tsp salt
Filling :
- 45 ml vegetable oil
- 20 gr garlic
- 40 gr shallot
- 150 gr minced beef
- 100 gr carrots
- 200 gr potatoes
- 50 gr bean sprouts
- 25 gr glas noodle (soun)
- 100 gr leek,finelly sliced
- 2 pcs hard boiled egg
- 50 ml vegetable stock
- 2 pinches ground nutmeg
- to taste salt and pepper
Procedure
- combine all ingredients and knead into a smooth, soft, elastic dough. Cover with a kitchen towel and allow resting on tabletop for 30 minutes.
- divide dough into 50 gr balls. On marble slab roll out round 10 cm diameter and 3 mm thin.
For making filling :
- heat oil in shallow frying pan, add shallots and garlic and saute over medium heat until fragrant.
- add minced beef, mix well and continue to saute over high heat until meat changes color.
- add sliced carrots,poatoes,bean sprouts, glass noodles and leek and mix well. Continue to saute over high heat for one minute.
- add vegetable stock, mix well and continue to saute for one more minute. Season to taste with nutmeg,salt and pepper. Cool.
- to prepare the pockets place one table spoon of filling into the center of the pastry rounds. Top with 1 egg wedge. Brush edge of dough with egg wash, fold dough over the vegetable filling and press evenly down.
- deep fat fry vegetable pockets at 150 derajat celcius until golden brown. Drain on pepper towel and serve together with chili suace.
