Daily Activity English Version 05

assalamualaikum guys


This week is the second week I practice after mid semester and this is my fifth daily activity. I left for campus at 6:30 a.m., when I arrived at campus I immediately went oneline because my other friends had been oneline, after that the supervisor signed us and then checked our grooming and equipment, after that we went in and stored the bag inside the locker. back oneline in the pastry while waiting for another friend to come all. the supervisor goes into the pastry and friends are also oneline all, before learning we read the prayer first so that today's work is smooth and there are no problems.

after that as usual the supervisor introduced himself to us so that we would also know him, and we also introduced ourselves to the supervisor. after that sir faisal entered into the pastry explaining the material that will be practiced today which is "breakfast", then sir faisal divides the group, groups 1-5 are preparing for tomorrow he practices the english breakfast. then group 6-10 that practices today namely continental breakfast.after sir faisal divides the group, then we do according to their respective duties. well my group made a "hard roll". then I made bread dough with my group friends, after that before the bread was toasted, the bread was first proofed in a cabinet for 30 minutes after it was given eggwash on the top of the bread. then enter the bread mixture into the oven.

at 12.00 it's time for us who are Muslim to perform dhuhur prayers, after prayer I go back to the kitchen to check my bread and it turns out guys my bread has been down to the restaurant :( but I also went wrong from the mosque late hehe ... we were all told oneline in the pastry again guys because the supervisor will share the tasks for general cleaning, then we all clean the kitchen in accordance with the tasks that were shared earlier to the supervisor, after that the weather did not improve due to very heavy rain so we waited for the rain while waiting sir faisal told us to go home, not long ago sir faisal told us to go home ...


recipe "HARD ROLL"
ingredients
350 gr water
10 gr yeast
625 gr hard flour
14 gr salt
14 gr sugar
14 gr shortening
14 gr egg whites

procedure :
mixing:
straight dough method (see note) 10 minutes at second speed. developing a dough at first or slow speed requires approximately twice as much time as at second speed 
fermentation :
about 1 hour at 27c
make up (oval rolls) :
1.                  scale and round the rolls as indicated above for round rolls 
2.                   roll the rounded units back and forth under the palms of the hands so they, because slightly elongated and tapered
3.                  proof and wash with water, slash with one lengthwise cut or three diagonal bake with steam
